Here is a problem that I’ve been having. I feel like I constantly tell people that it’s not expensive to eat vegan, and now that we have been vegan for a while our grocery bill continues to increase. I’m not exactly sure how this happened, but it’s gotten out of control. Maybe I have an impulse problem when it comes to buying food. I do love to shop for food a bit too much!
I think it’s time to do a challenge… Vegan On the Cheap! For me, this is going to be really extreme. My goal will be to only spend $15 per person per week in my household for the remainder of October. This will make my grand total for my family of four only $60 per week in groceries. This will cut my grocery spending in half (or more… oops!). I’m still not exactly sure how I will accomplish this, but I love a challenge!!! I will give myself this one stipulation…. I can use anything that I currently have in my cupboards and refrigerator without it negatively affecting my total cost per meal.
So… be prepared to see my menu and possibly even recipes as this challenge plays out this month. My shopping day for the week will be on Wednesday. Wish me luck!!! I need it!
