Shopping Clean

Here I am, on a mission to eat clean this week.  Yesterday went really well.  I went through my fridge after work and put together a nice salad with homemade creamy dressing (made from raw cashews).  Today, I decided to go to the grocery store to buy food for the week.  I haven’t exactly planned out my meals, but I have a good idea what we (I) will be eating this week.  My husband seems to be on board with cleaning-up his diet too, but he hasn’t committed to it yet. We’ll see…

I went shopping at three different stores:  Costco, Trader Joe’s, and Giant Eagle.  Here is what I brought home.

Costco: dates, mandarin oranges, broccoli, bell peppers, spinach, and romaine lettuce

Trader Joe’s raw food: cucumber, jalapeños, pea sprouts, cashews, cauliflower,
limes, and avocados

More produce:  kale, green onions, and carrots

Non-raw food (Trader Joe’s and Giant Eagle):  Tofu, raisins, steel-cut oats, rice noodles,
cocoa powder, brown rice, and a sushi roller (a replacement for my missing one)

After all of that shopping, I was soooo hungry. I ended up making another salad, because I knew that we were going to have cooked food for dinner.  I made a simple salad with the produce from today and used up the rest of yesterday’s creamy dressing

Salad: romaine lettuce, broccoli, yellow peppers, pea sprouts, onions,
sunflower seeds, and creamy miso cashew dressing
 
 
I finished this meal up with a smoothie. I plan to eat a lot this week. I’m just going to eat to my hearts content.  I refuse to starve while changing my diet! If anything else, I may eat more than I normally do. 

Smoothie: Frozen pineapple, frozen broccoli, fresh spinach,
lime, and a mandarin orange
 
 
For dinner, we’ll be having what I call “stew”.  It consists of tomatoes, and carrots, and celery, onions, kale, lentils and it’s served over brown rice.  Although it’s pretty veggie heavy, I’ll also serve it with a side of kale (either raw curry or steamed with cashew cream).
